They use Tipo 00 organic flour and semolina, local organic vegetables for fillings, organic Ecocert eggs, DOP 24 months Parmigiano Reggiano. Some of their ingredients are organic. They have low gluten cappelletti, spaghetti, tagliatelle and fettuccine and in 2015, they launched gluten-free cappelleti and spaghetti pasta. Il Mattarello also has a small selection of homemade sauces such as Genovese pesto, tomato sauce and mushroom sauce available for order. Order two days in advance. Prices start from HKD 28 per 100 grams for the long pasta and 42 per 100 grams for the filled pasta.
