Climate-Friendly Meal Pairing: Chicken-Free Tindle Joins EcoSpirits & Brass Lion Distillery For Sustainable Dinners Series

Last month, well-funded food tech startup Next Gen Foods debuted its plant-based chicken brand Tindle to great acclaim. The company is back in the news again, and this time it’s to share details of its upcoming sustainable ‘Proper Dinner’ series, which sees Next Gen join forces with F&B company EcoSpirits and Brass Lion Distillery to host a month-long dining events at 28 Hongkong street bar in order to promote climate-friendly food.
Singapore-based Tindle wants to promote climate-friendly food among consumers in Singapore and showcase how a single serving of sustainable food and drink can have a positive impact on the environment. To do so, the young company has entered into partnerships with a duo of food & beverage industry pioneers.
Paul Gabie’s ecoSPIRITS, a leading name in the Asian spirits industry has a closed-loop distribution system that works to limit the use of plastic in the premium spirits supply chain. Together with Brass Lion Distillery, the country’s first full-fledged micro-distillery to sources all of its ingredients locally, the former will create gin cocktails and look to reduce the use of glass and packaging waste using the former’s delivery system.
For every dinner hosted, the series has identified three climate goals including 1) saving 31 litres of water by ditching meat preparations and opting for plant-based ones, 2)getting rid of 150g of carbon emissions through ecoSPIRITS’s low-waste tech and 3) planting one native tree in Indonesia’s endangered Kalimantan rainforest.
In a press release seen by Green Queen, CMO of Next Gen, Jean Madden said that the plant-based chicken brand, which is “founded on the belief that doing our part for the planet should be easy, enjoyable, and most importantly delicious” is “excited to partner with like-minded brands such as Brass Lion Distillery, ecoSPIRITS and 28 HongKong Street to showcase how these special moments can also have a positive impact on the environment and our carbon footprint”.

The Proper Dinner series will invite guests to try out Chef Melvyn Tan’s TiNDLE take on the bar’s famous Fried Chicken n’ Waffles recipe, with the chef promising to make everything from scratch in a bid to make the dish as sustainable as possible.
The dish will be accompanied by a low-waste Brass Ring Cocktail prepared by the country’s Sustainable Bartending Competition winner, Chris Saw, and made by upcycling waste from the kitchen. The vegan cocktail will feature Brass Lion Singapore Dry Gin, white wine and a homemade lime cordial prepared from leftover lime husks.

Earlier this year, Next Gen raised a global record-breaking US$10 million seed round in order to launch TiNDLE, a chicken meat analogue created with the help of food scientists, chefs, and industry experts and made out of non-GMO plant-based ingredients like soy, coconuts, and sunflower oil. It debuted across 11 restaurants in the city.
